Dianna Mandzuk's Pumpkin Loaf
| 3 Cups | All purpose flour |
| 2 Cups | White sugar |
| 2 tsps | Baking powder |
| 2 tsps | Baking soda |
| 1/2 tsp | Salt |
| 1 tsp | Cinnamon |
| 1/2 tsp | Nutmeg |
| 4 | Large eggs |
| 1 1/4 Cup | Cooking oil (Crisco) |
| 1 19oz can | Pumpkin pie filling |
| 1 Cup | Raisins (if desired) |
Sift flour, sugar, baking powder, baking soda, salt, cinnamon & nutmeg together.
In a large bowl, lightly beat 4 eggs & 1 1/4 cup cooking oil. Add 1-19oz can pumpkin pie filling. Add dry mixture and beat lightly with electric mixer. Add 1 cup raisins (if desired). Bake approximately 1 hour at 350 degrees or until done. Makes 2 loaves.
HINT: use a clean large apple juice tin. Leaving the bottom intact, use a can opener to remove the top. Wash & dry. Spray inside with non-stick cooking spray & line with parchment paper. Pour loaf mix into within 3" of top of tin. Once baked completely, allow to cool, turn out of tin & cut into round slices.
